Rocky Road Brownie Cupcakes

Had a chance to make some Rocky Road Brownies and thought, what the heck-why not try that in a cupcake--the next best thing!! So, I put the chocolate in the double boiler (not once but twice, since I did the recipe for the brownies first) and cracked all the eggs, added the remaining ingredients and plopped em in the oven! After 35 minutes-I went back and put mini marshmallows, mini chocolate chips and some graham cracker crumbs on top and baked another fifteen minutes--here's the end result! 

PS--Wish you could've been here to smell the aromas coming out of the kitchen that day--heavenly, yes in one word, absolutely HEAVENLY!!!!!

Well, decided to give the Tie Dye Cupcakes a try and thought they turned out pretty cute! I have to do an outdoor event this weekend and worried about icing in the heat not "doing so well", so this was the idea I came up with. Producing lots of cute, un-iced cupcakes that speak for themselves, so to speak! Preparing the bowls of colored batter was the labor intensive part-the rest was a "piece of (cup)cake!!" Another fun summer cupcake!! Groovy too!

IceCream Cone Cupcakes


Ice Cream Cupcake Cones!!!

Well, I thought I had it all planned out; but.. things always go a little haywire when you think you have them in the bag, lol!! Whatever the case and whatever happened in between-these came out pretty cute and I think the adorable second grader who requested them for her birthday was pretty pleased!! Happy Summer--what better than ice cream cone cupcakes with tons and tons of "jimmies!!"
