Vanilla Blossom Cupcakes "How-To"

I made some petite vanilla cupcakes the other day. First I created a standard vanilla cupcake but then wanted a different look, so I used a blossom cutter to carve out the shape of a flower. I piped vanilla buttercream on top and used a large 2d tip to make a violet flower on top. I made some green leaves coming out of the sides of the flowers and put a dot of icing with a silver dragee on top of each one!

Tie Dye Cupcakes with Tie Dye Frosting!

Had a request for tie-dye cupcakes recently. Therefore, I grabbed a bunch of bowls, spoons and food coloring and got busy! I added different colors to my plain vanilla cupcake batter (above). I then layered the different colors in each cupcake liner and before putting them in the oven, I swirled the colors with a toothpick (see below).

Here's how the cupcakes looked before going in the above (above) and then how they looked once they were cooked and removed from the oven (below). I was pleased that the colors stayed pretty true and didn't have much fading!!

For a final effect of tie dye craziness, I tinted the buttercream frosting in shades of pink, purple and green and swirled them in my pastry bag to wrap up the theme!! On top, a tiny little candy heart completes the sweet deal!! They ended up being very well received and luckily didn't taste as zany as they looked--described as delish--yummo!

Well, getting excited and ready for the fourth Iron Cupcake Challenge! Tonight's event, which I am hosting, is complete with talented bakers, four amazing judges, wonderful prizes, anticipated delish cupcakes and the chance to support a wonderful worthy charity!! This event is a dress-up event and I have secured a great costume--a vampire witch with faux eyelashes, black lipstick, long black wig and white ghoulish face paint! I can hardly contain my excitement--but not just for dressing up and feeling like a kid again. I am excited for the fun we always have at these challenges!! I will be bringing many cupcake related door prizes for folks; my official $300 sound system fit with high tech microphone and the awards/certificates for the new winners of the Iron Cupcake Challenge!! Tonight's charity is the Knight Park Playground Foundation and its goal is to provide a safe and fun playground for kids of all physical abilities and ages. One of the most exciting parts of tonight's challenge is that it's being hosted by Connie and Stink Fischer of Collingswoods infamous, The PopShop! The PopShop has been featured on the Food Network because of their unique and whimsical menu featuring over 30 kinds of grilled cheese, dozens of unusual pancakes, soda fountain drinks/desserts and more! BOBBY FLAY himself challenged Stink (owner) to a grilled cheese throwdown recently and I bet you don't need to tell you who won--STINK!! The food, atmosphere, and owners are unmatched-so please come join us for a wonderful night of delicious cupcakes (this month's secret ingredient is: PUMPKIN, of course!), great friendly competition, amazing food, Halloween dress-up ghoulish fun and wonderful prizes!!

Cupcake Tower#3 COMPLETE!

Well, I completed my third cupcake tower over the weekend. It was my largest order ever of appro. 200 cupcakes. I ordered the cupcake tower about a week ahead and chose a fall color palette to decorate it. My plan was to make tons of sugar paste flowers and decorate it with those. Of course, plans are great but even the best laid plans don't always come to fruition! I very smartly planned ahead and purchased a dozen roses the day before the tower was due, in case I needed supplemental flowers or just to add to the decorations of the tower. I made three kinds of cupcakes: vanilla, chocolate and red velvet. Whew-was that a ton of cupcakes to make. By the time I finished icing them all my hands were quite sore. I tinted the frosting in three tones; a copper shade, a cream color shade and a rose red. I had used coordinating ribbon and faux flowers to try to give the tower a wonderful fall feel. When all was said and done, I def. am glad I had the extra real flowers-I didn't have nearly enough gumpaste roses/flowers and it worked out very well! In the end, the cupcake tower and the cupcakes all came together well and I thought it was a nice fall arrangement. I have received positive feedback from the client, so I think she was pleased also! Thank goodness I had those roses to bring it all home-disaster averted-for now at least!

Next Iron Cupcake Challenge

Well, we are gearing up for our next Iron Cupcake Challenge! (In the photo above, our judges from the last challenge carefully sample and "grade" the cupcakes which were entered in our maple ICC for September) I am so very excited because this time we are being hosted by the PopShop in Collingswood! The PopShop has amazing food including over thirty varieties of grilled cheese and many delish choices for food lovers of all ages! The PopShop was even featured on the FoodNetwork recently when Bobby Flay challenged him to a THROWDOWN! The owners, Stink and Connie Fisher have been gratious enough to host our fun cupcake event and we are psyched to be there! The secret ingredient this month is PUMPKIN and we are encouraging all bakers and guests to dress up in their favorite Halloween gear! Can't wait to see all the ghouls and goblins who show up! We have an unprecedented FOUR judges this time and as always, top prize is $100.00 for the adult baking level!! We have recently added a jr. bakers level (kids 16 and under) and top prize for them is $20!!

As always, a portion of the proceeds from this event will benefit a very worthwhile charity--this month we are donating to the Knight Park Playground Foundation! Cupcake Tower Number 2 --DELIVERED!

Well, I had to deliver my second cupcake tower this passed weekend. It was for another first birthday party for a lovely little girl. I was asked to make the color palette pinks and greens, so I took that and ran with it. I used pink tulle, pink satiny bows and pink polka dot ribbon to fancy it up. I covered the cupcake tower with thick green wrapping paper and piped pretty tulle ribbon along the edges. That, plus sixty cupcakes with tons of fluffy pastel icing and tiny fondant toppers (plus lots of polka dots) made it all come together. The centerpiece was a three layer cake (made of three stacked six inch cakes) which I placed a giant G on (in honor of the birthday girls initial). Lots of pinks, greens, dots, frosting, ribbons and tulle made for a girly-girls cupcake tower dream. Hope the birthday girl got to sample lots of them!

Well, here we go again! This will be my second cupcake tower and it is starting to feel like "old hat" or should I say, "old cupakes" lol. This time, I sketched out my idea and thought a round cupake tower would be a nice design element and wanted to see how it differed from the square one I used last time. Well, first difference was trying to cover it with wrapping paper, much harder, but overall, I was pleasantly pleased with the feminine look and cutesy feel of this tower--exactly what the customer ordered for her special little cupcake who's turning one this weekend!! More pix to come after cupcakes are completed and put on top!!

Had a wonderful time creating this fantasy cupcake tower for a little girl's first birthday! The theme was girly, pink and princess all wrapped into one and in the end, I think it was pretty and fit the bill! The cupcake tower came uncovered as a recycled piece of cardboard. I purchased heavy duty wrapping paper and covered the layers with that to give it a more dressed up feel. I also added small rosettes to the tiers and pretty pink tulle. The cupakes fit very well on the tower and on top I place a giant cupcake as the centerpiece. Of course, the handmade fondant toppers in the shape of princess crowns, magic wands, sparkly stars and pretty flowers added a royal touch! There were also fondant butterflies and a giant number one gracing the top tier--have to make it extra special for the first birthday--only happens once!
The giant cupcake on top was covered in frilly/fluffy pink buttercream and laced with edible pearlized dusting powder-it gave it a little glowing shimmer that made the whole thing sparkle--I'd say it was definately fit for a little princess!

GumPaste Flowers/Sugar Craft

I am in love with gumpaste flowers! I had an order to create some special flowers for some cupcakes a friend was sending a special ladyfriend. These had to be remarkable! So, I started by tinting some sugar gumpaste pink. I used a 5-petal flower cutter and cut out the flower designs. Then I took my large ball roller and rolled over the leaves.

After I rolled the leaves, I had to turn the flowers over and put a dent in the opposite side. I continued this and made about 40 of them. They were cute like this, but had much more dimension after I added the inner petal colors.

Here I placed the flowers in a small palette to allow them to begin to dry and keep their shape. I added the tiny balls of yellow and then green in the center of the roses and used my veiner tool to punch tiny holes in the center pieces. I used a dab of liquid gumpaste as a "glue" to keep the centers in place. After that, I sprinkled a tiny bit of edible gold dust on them.

Here are the six wild roses I crafted, they are now drying out. In the meantime, I cut some tiny green leaves using a small leaf cutter. I just love the color palette, very vintage and muted.

Here is a closeup of the leaves while they are drying out. Can you see the gold shimmer on them-added the tiny edible gold luster to these also. In addition, I used two different colors to make them pop when they are added to the roses for extra dimension.

Here is a closeup of the dried wild roses. The gold luster dust gives them a shimmery glow. They are quite delicate, but once they dry out will be easy to handle. Very elegant! Time to dry out for at least 24 hours.

Next day, I made the cupcakes and created the frosting. I tinted the frosting in three different tones using food coloring to bring the whole look together.

Here is the pink frosting being put on the cupcakes with a large pastry tip-look at those swirls
Here are the yellow tinted cupcakes being completed. Note: always start your frosting around the outer edge and work your way inwards--piling up the frosting as you go round.
Here is the green frosting. I took a risk and tried a three pronged pastry tip to serve as "grass" to put the flowers on. It paid off and I think it served its purpose. You'll see what I mean below
Quick shot of the cupcakes and the process for filling the pastry bags, I use a large beer glass to drape the pastry bag over and stuff my frosting in. Easy method for keeping things tidy!

And introducing... the completed cupcakes with the gumpaste flowers. I'd love your thoughts on how they turned out! Leave a comment if you'd like-always appreciated!

I was quite proud and think they came together perfectly--ps..so did the client--his little ladyfriend gave him a big hug and kiss--guess these really were magical, lol!

I am now in love with gumpaste flowers and will be tackling many more--I even went out and bought three new books filled with ideas--think I will be quite busy learning some new tricks!

Another Successful Iron Cupcake Challenge!!

August proved to be another successful event sponsored by Kati's Kupcakes of Moorestown, coupled with some wonderful bakers and some great judges, and of course some truly amazing coconut cupcakes! Thanks to all who were involved--you helped us collect not only non-perishable food items for back to school kids who lack a nutritious breakfast but also, we raised cash donations based on ticket sales and 50/50 items!! Look out-we have just announced September's challenge on Sept. 26-the secret ingredient will be MAPLE-- who will win bragging rights as the Iron Cupcake Champ--currently Carmen Colon of Eatontown holds the crown!

Iron Cupcake Challenge is coming--

R U READY??

The next Iron Cupcake Challenge in Moorestown will be this Saturday, Aug. 29 at 7pm. It was a tough decision for me since my husband's birthday is the day before, however, once he gave me the go-ahead--I "went ahead" and with full force, I may add!! This month's secret ingredient is COCONUT! I think I am trying to stretch summer and the tropical themes of the islands as long as I possibly can before we start the whole "fall/back to school" business! So, TWENTY of the area's top cupcakers will submit their best coconut cupcakes and present them before a panel of esteemed local celebrity judges!! This month's judges are the virtual "who's who" of the area's food industry! For starters, we have a food expert from the delectable "Passieriello Pavillion" on Main Street. Passieriello's provides delicious fresh Italian cuisine to many hungry foodies and boasts delish desserts like cannoli, tiramisu, cheesecake, chocolate desserts and much more. Our second judge is a art/food junkie with an amazing coffee house/cafe in the Philadelphia region. Lastly, the infamous, Bill "Stink" Fisher of Collingswood, "The Pop Shop" will round out our judges panel. Stink Fisher is well known in the area as the grilled cheese king and has received national attention for his food skills. He was even challenged by Bobby Flay on the Food Network to go head to head in a grilled cheese throw-down!! The event will once again benefit charity-this time the FoodBank of South Jersey will be the recipient. A portion of the sales of tickets will be donated to them as well as donations from bakers who are being asked to bring a non-perishable breakfast item for needy back to school kids who may be lacking a nutritious meal in the morning!! Top prize will be $50.00 and of course, bragging rights as the one and only IRON CUPCAKE CHAMPION!!!! Second and third place prizes have also been generously donated and there will be some giveaways and a fun 50/50!! The community is really buzzing about the newest craze in Moorestown--are you ready to throw your oven mitts in the ring and vie for the title of Iron Cupcake Champion?? Stay tuned.......

THE MAKING OF THE YANKEES (CUPCAKES)

ANOTHER ATTEMPT AT MAKING A BASEBALL TEAM (OF CUPCAKES)

Okay, so, I had another baseball themed order and again for the Yankees. You would think I would have it down by now. First problem was I didn't have the dark blue food gel I needed, bad mistake and very unprofessional on my part--however, i made the best of the sitch and used black--i think it was a good substitute (though hubby didn't agree, lol). Anyway, once again, I started a day before and made the fondant toppers. i made a few templates for the baseball jerseys and went on the internet for the logo and found the teammates names to match the favorite players numbers of the recipients of the cupcakes (thanks to a great link by my facebook group for the right website page a lot of time was saved). Anyway, I wanted to mix it up a bit and throw in something new, so I tried mini baseball mitts this time and I think they came out pretty cute for my first try. Hope the NY Yanks fan that I made these for like them-haven't heard feedback yet but since this is a repeat customer, I'm thinking they passed!

Here's some of the fondant toppers-I like to make them a day ahead so they dry and don't go all mushy wushy on the frosting they sit on (I borrowed my son's baseball to get the stitching as realistic as possible)

Here are a few of the mitts in the lower right hand corner, hard to see but if you squint....
Well, first things first. I mixed my dry ingredients (cocoa powder, flour, sugar, baking powder, baking soda, and salt) together in a large bowl and whisked them to remove lumps and bumps.
Next, i added the wet ingredients starting with the 2 eggs one at a time.
Here is number two--hard to maneuver with one hand cracking and taking photo with other, lol
Next is the water, oil and vanilla.
Finally the buttercream goes in and then.....mix away thoroughly until all ingredients blend.
Line your pans with cupcake liners/baking cups and make sure oven is ready at 350 degrees..
Now you are ready to fill the cupcake cavities with 2/3 of the prepared cupcake batter.
Next, put them in the oven for approx. 18 minutes. I always set timer for 15 minutes and check how they are doing, usually adding on about 3-4 minutes.
Once they are baking, I start preparing the buttercream icing and piping bags. Here is some white buttercream frosting. I put blue gel in the bag to create a blue tint to the buttercream, trying to justify that there was no blue in the team jerseys, I tried this instead.
I use a large tall beer glass and place my piping bag in the glass, fold over the edges and scoop the frosting in the bag by the large dollop-full as you can see below:

Next, you see the unusual blue tinted frosting in the piping bag. I created some blue tinted, some red tinted and left several white. So, the palette for the NY Yankees cupcakes were red, white, blue and black.
Here are a few of the completed ones. Note the team jerseys, large baseballs, mini baseball bats/balls and mini baseball gloves plus some batting line-up signs. All in all, a sweet success and I think I knocked it out of the park somehow, despite the little hiccups along the way.

***Note to self: go buy some royal blue icing to have on hand for next order!!!!

Iron Cupcake Challenge: MOORESTOWN

Well, I hosted my first ever Iron Cupcake Challenge here in MOORESTOWN, NJ this past Friday evening. LET'S JUST SAY THINGS GOT A LITTLE WILD, LOL!

While I was thoroughly amazed at the amount of bakers that wanted to be part of the event, it was also hard to reign in the crowd with FIFTY FOUR bakers making cupcakes. To expedite time, we split the four judges in team of two and they were very happy that they did not have to actually taste over fifty cupcakes each, lol. The event had a charity auction as well and the whole goal of the evening for me was to raise funds for Alex's Lemonade Stand Foundation-a pediatric cancer foundation that raises funds and research for patients and their families. I AM PROUD TO SAY WE RAISED OVER TWO THOUSAND DOLLARS FOR THE CAUSE AND HAD ALMOST 500 PEOPLE/PASSERBY'S PARTICIPATE-including our own furry green monster, the Phillies Phanatic. Here are some pix from the evening:

Here is a photo of me with just a small glimpse of the amazing auction items we received from reknowned sports teams like the Philadelphia Phillies, 76'ers basketball group and the Flyers Hockey organization-autographed hockey sticks, pucks, posters, basketball jerseys, etc.

Me and my son, just before the big event got officially underway-boy did he have alot of cupcakes that day--there were well over 3,000 cupcakes at this event-we even sold cupcakes and lemonade to help raise more funds for the charity.

Iron Cupcake Challenge for Alex's Lemonade Stand Foundation

THREE DAYS AND COUNTING!

The first ever Iron Cupcake Challenge Moorestown will be held this Friday evening at the Green Apple Bistro on Main Street. I am so excited to bring this fun event to our little town and am thrilled that we are doing a charity auction in conjunction with the cupcake throwdown! All proceeds from the auction will benefit ALEX'S LEMONADE STAND FOUNDATION, which aids pediatric cancer patients and their families. It is amazing how the town has rallied together to help me with this wonderful and fun event. Area businesses have donated gift certificates, cooking products, books, and many other great finds!! Philadelphia Sports Teams such as the Philadelphia Flyers Hockey organization, the Philadelphia 76'ers Basketball group and the Philadelphia Phillies (2008 World Series Champs) are all lending a hand for this worthy cause! We will even have a visit from the famous green furry PHILLIE PHANATIC!! I am so thrilled. The sports team have generously donated autographed sports gear such as Hockey pucks, sticks, posters, and the like with star players signatures like Simone Gagne and Claude Giroux! Alex's Lemonade Stand representatives will be on hand to help the youngsters of town hold their very own lemonade stand so they too can be involved in the fundraising effort! I have volunteers such as dee-jays, sound techs (provided microphone), news media coverage, and so much more! The judging panel includes our town Mayor Dan Roccato, local ABC News6 Anchorman Rick Williams, former Philadelphia Hockey player and Ambassador to the Flyers Organization,Bob-the Hound-Kelly and official Moorestown Judicial Courts, Honorable Judge Lois Downey! What a panel of stars and what a star studded event! I feel so blessed to live in such a wonderful town and to be able to put together this charity benefit for Alex's Lemonade Stand Foundation! Without all the help of some wonderful people, this event would've only been about the cupcakes, but it is really about so much more--cupcakes and charity--perfect together!!!

Japanese Tea Gardens and Cupcakes

THE JAPANESE TEA GARDENS, SAN FRANCISCO, CA

Recently I visited the beautiful Bay Area and had a chance to go to the lovely Golden Gate Park. I visited the Japanese Tea Gardens with my daughter and she picked up a lovely Japanese umbrella. The colors were muted pinks and greens with simple inky drawings of birds and flowers. The umbrella is beautiful and the gardens are stunning. I made some cupcakes recently that depict my visit there. The bright hues in that garden were eye popping. That was the idea of the frosting on these cupcakes, bright, beautiful, eye-catching and cheery. PS-If you look close enough, you may see my daughter's adorable Japanese umbrella in the background. She lent it to me for the picture but I had to promise to give her a cupcake, lol! Good compromise, I'd say she made out pretty good on the deal though!

If you ever have the chance to visit the gardens, it's a must. I can't promise that you'll get cupcakes on your visit, but just think, you'll have plenty of gorgeous, bright and cheery "real"flowers and horticulture to look at! You'll be so busy exploring the foliage, you'll forget all about the cupcakes! :)

Well, I was working on a little fun "in my spare time" project. Lol, as we all know there is NO SUCH THING! So, I have been totally diggin Aranzi Aronzo!'s books entitled Fun Dolls, Cute Dolls and Amigurumi Dolls. These are miniature "stuffed pals" that you can create with sewing materials but I love the designs and simplicity and have taken it on my own to use them as inspiration for my cupcake creations. A DIFFERENT AND UNIQUE BOUQUET OF FLOWERS!

I promised myself I would get back to blogging-it has been too long! I have so much to share and simply must start making this a priority! Editing cupcake photos, updating twitter sites, reading the latest Entertainment gossip on MSN will have to wait!! SO, that being said, here are the photos of my cupcake bouquets! I am planning to make these a featured product at KATI'S KUPCAKES, so I'd love your feedback! I'll try to take you through this slowly, step by step! Hope you enjoy the ride--I felt very accomplished afterwards and was suprised at the ease of preparation. Maybe you can try them out and we can talk after--would love that!

Step one: Bake and ice your cupcakes! Let the frosting dry and become stiff to touch!

Step 2: Fill a large vase with pretty crumbled up tissue paper.

Step 3: Top vase with styrofoam ball (available at craft stores). Attach ball to rim of vase with hot glue gun. Size of styrofoam ball will depend on your vase. You want the ball sitting on top of the vase snugly to avoid movement. Add a pretty ribbon also. I tied my ribbon but reinforced it with a few dabs of the hot glue gun.

Step 4 and 5: Poke a thin 1 to 1.5 inch slit in the bottom of each cupcake. Using craft sticks, gently insert the cupcake in the craft stick and remove. Next, place the craft stick in the stryofoam ball and place cupcake on stick. Continue this as you go around the outer edges until you've completely covered the entire surface of the styrofoam ball.

Step 6: Place last cupcake on top and present to lucky recipient! You can also put edible flowers on each cupcake to give it more of the "bouquet" feel. I suggest keeping it simple though because it could take away from the elegance and simplicity of the overall design! Enjoy!

Unique Banana Splits!!

I made these banana split cupcakes with my Katis Kupcakes FaceBook group, called Kati's Kupcakes Bake Along. This week a group member picked a banana split cupcake recipe from the website "www.howstuffworks.com." It started out as a box mix base, then you enhanced the mix with bananas, maraschino cherries and chocolate chips--plus just for fun and to go with the whole "banana split theme", I added sprinkles too! After cooking the cupcakes and allowing them to cool, you ice them (I used a marshmallow buttercream) and add some hot fudge and a cherry on top! To be different and since I love creating fondant decorations, I added some sculpted cherries which I fashioned out of fondant!! I tinted some white fondant red to represent the cherries and put a small dent in the top and inserted a small green stem!! These were fun. I even put them in a tall icecream parlor like glass for the old fashioned icecream shop feel!! Very fun to make--next up for the group--Rocky Road Cupcakes!!! Enjoy!

Sweet Suprise for a friend!

My friend invited me to a swim team gala she was having at her house for members of our local community. It was an adult social event for the parents of all those talented kiddies on the highly acclaimed town swim team. Sadly, my kids are NOT on the swim team and even more sad is that two out of three of my children are non-swimmers-but, that's a story for a different blog--back to the cupcakes!! She invited my husband and I to her "casual cocktails" event and we gladly jumped at the chance to have a night out. My mind starting working as to what kind of cupcakes I could suprise her with for the evening. I had wanted to do some summer themed cupcakes and started working on some fondant cut-outs and carvings and naturally you can guess what type of cupcakes she received---I present my beach themed cupcakes for a dear friend who allowed some "non-swimming parents" to her swim team party! Hope you like them!! Most of the cupcake toppers are made from tinting gumpaste and fondant. I created several templates for the fish and shovels and the rest just tried to be creative with!!

Mocha Cucpakes for my FaceBook Bake-Along group!

I have a group on facebook that follows Kati's Kupcakes and we decided to do the weekly baking group thing! I am so envious of those groups and thought I'd give it a go. The first week four of us made these mocha cupcakes with kahlua frosting! They smelled wonderful like a yummy coffeehouse drink and the cream cheese was decadent yet not overly boozy (main ingredient: kahlua-lightweights beware). Anyway, week 1 of our bake-along went great and week 2 is starting. We are making banana split cupcakes from the "How stuff works" website. If you'd like to join us, please feel free-lots of fun and a great way to get that extra baking practice in!! Happy Graduation!!

Ah, remember the days; those last few days of high school and then freedom loomed-little did we know we were better off there than in the real world, but thats another story, lol. I had to make 80 graduation cupcakes for a new "almost out of high schooler" and found an idea on the internet. It required creating some graduation themed picks with popsicle sticks to stick in the cupcakes. Also, I created tiny graduation diploma scrolls with rolled up parchment paper and a little ribbon. Finally, I added a few little embellishments that I found at the grocery store: candles in the shape of a graduation cap. That coupled with graduation cupcake liners, and some gold icing dust created a nice looking group of graduation cupcakes! See the photos:

Yankees Cupcakes

I had an order for a young Yankees fan who needed some cupcakes to impress his fellow teammates and ballers, so I started getting to work on some cupcakes using fondant "accessories". A couple days ahead I cut out some fondant discs for baseballs and created a template for some jerseys. I also created tiny picks made out of Yankees images from the web. I went with red, white and blue to go with that hometown baseball feel and I think they were a "homerun!" He really got a kick out of them and his three brothers too, so that's all that really matters!! It was alot of fun making these too, plus I learned a little bit about the Yankees along the way!! Go Team!!

These are the baseballs, jerseys and matching swirled cupcakes. There is a Derek Jeter #2 jersey and of course, the birthday boy is #1. Also did the Yankees logo on some of the jerseys.

Beautiful Bridal Shower Cupcakes!!

I was asked to make some cupcakes for a bridal shower, so once again I found myself turning to those beautiful "speak for themselves" edible flowers. I had originally bought some cheesy plastic fake silver rings from Michaels, but they just didn't make the cut. I think I definately made the right choice on this one. Plus, I finally figured out how to make those beautiful thick piled up perfect swirls (want the secret?? 1m tip !!!!--but I am sure you all knew that!) Anyway, I mixed some colored gels into my tinted frosting and added some glittery sprinkles and viola-it's as if some fairies are having a tea party--don't you agree?? I just love pastels, flowers, swirls, glitter and pretty petite flowers--adorable combo!

Everything looks better when saturated in pinks, lol:

My Alice In Wonderland Cupcakes!!

Here are my cupcakes for an Alice In wonderland themed bday party. I practiced a few times before the event to ensure they would be perfect. Celebrating Being Eleven!

My daughter turned eleven last week and she promised her friends these wax soda bottle custom cupcakes, made by mom (me) with lots of love. I had to go to three stores to find this throwback to the old skool candy; but I managed to find them. Oh yeah and did I mention she also requested if it wasn't "too much trouble" could I please dye the icing the same color as the wax soda bottle treats>good thing I love her-I would do whatever it took to help her enjoy her big day! The cupcakes were a hit and apparently the fifth grade boys and kids from other classes were chasing her down the halls to get one--score one for mom, lol!

Rocky Road Brownie Cupcakes

Had a chance to make some Rocky Road Brownies and thought, what the heck-why not try that in a cupcake--the next best thing!! So, I put the chocolate in the double boiler (not once but twice, since I did the recipe for the brownies first) and cracked all the eggs, added the remaining ingredients and plopped em in the oven! After 35 minutes-I went back and put mini marshmallows, mini chocolate chips and some graham cracker crumbs on top and baked another fifteen minutes--here's the end result!

PS--Wish you could've been here to smell the aromas coming out of the kitchen that day--heavenly, yes in one word, absolutely HEAVENLY!!!!!

Well, decided to give the Tie Dye Cupcakes a try and thought they turned out pretty cute! I have to do an outdoor event this weekend and worried about icing in the heat not "doing so well", so this was the idea I came up with. Producing lots of cute, un-iced cupcakes that speak for themselves, so to speak! Preparing the bowls of colored batter was the labor intensive part-the rest was a "piece of (cup)cake!!" Another fun summer cupcake!! Groovy too!

I Made more Cupcake Pops!!

I had to run a workshop about cupcakes for first graders at my son's school the other day. I didn't have much time; about twenty minutes-so I thought of Bakerella's (www.bakerella.blogspot.com) cupcake pops! It was alot of prep work; but the kids had a ball. These were some samples for them to take home but they each got to dip their own and make two pops ("one for now; one for later" the teacher told them!) I did the prepping for this project the night before by making all of the cake balls. The day of the event, I attached the sticks to the pops and when I got to the elementary school, I put them right in the cafeteria freezer. Next, I heated my Wilton chocolate melting pot and made a cupcake pop station complete with sprinkles, melted chocolate pot, a big tray of cupcake pops on a stick and of course, a big square of stryofoam to dry the ones being saved for later! The kids got to also make a little tag for their pop and pick out a cute ribbon to tie on their bagged up pop! That day, I think I was the hit of the first grade--hey, even though it was only for a brief time-I enjoyed having alot of fans--I think the cupcake pops, melted chocolate and sprinkles had a LOT to do with my popularity that day (thanks Bakerella once again!)

MORE EDIBLE FLOWER CUPCAKES!

Well, after making the mini edible flowers, I had a bunch left over and had a picnic to go to on Sunday, so I thought this would be the perfect time to use up the rest of them! Believe it or not, the kids at the party started eating them all up before the adults even had a chance! I had made a few dozen mini chocolates for the kiddies with sprinkles and blue icing. Believe it or not, all the mini cupcakes went and most of the larger ones, which you can see below! I think I made a few young fans yesterday! One of the little girls wants them for her upcoming birthday--so now I'll be making 100 MINI CUPCAKES WITH EDIBLE FLOWERS--what have I got myself into??

Edible Flower Cupcakes!

I made these cupcakes yesterday for a teacher at my sons school who was celebrating her birthday. It was a little surprise for her as I had some leftover mini cupcakes from her order, so I decided to do something special for her and make some unique pretty suprise cupcakes. She ordered 3 1/2 dozen mini cupcakes for all the children in the kindergarten classes to celebrate her birthday with her at school. Since she was so sweet and kind to do that, I thought I'd give her a little of my own kind of sweetness!! What better than adorable little cupcakes with edible flowers? I'd been wanting to try these out and I am just delighted with them--now I have a little case of them in the fridge leftover and need to find someone else to share them with!! I think she was pleasantly suprised!!

They did look really cute-almost too cute to eat. Thank goodness they were for someone else, or I might have popped a few in my mouth when no one was looking, lol!

GUMMI BEARS AND CUPCAKES!

When I had a request for some cupcakes that incorporated gummi bears, wasn't sure what I'd do! I started with a nice thick basic mound of fluffy cloud-like buttercream on a vanilla cupcakes! I started to have a vision-what about gummi bears sitting on cloud 9? These little gummi's were so cute and colorful against the white dreamy frosting. All I had to do was sprinkle a pinch of jimmies on top and "viola"--my new creation was born! They even look cute without the sprinkles added on-which do you like best?? See below:

CHOCOLATE MINT CUPCAKES WITH CRUSHED PEPPO-MINT CANDY

I thought these peppermint cupcakes came out too cute!! I started with a chocolate cupcake infused with mint extract and a buttercream frosting. I piped it half pink and half white and then added chopped bits of classic peppermint candies. I photographed them on pink tissue paper to really bring out the color and I think it did the trick! They really had a cool minty flavor and the kids gave them an "A-plus" rating; oh well, who am I kidding--there really hasn't been a cupcake they didn't like! Thank heavens for my family, they are my biggest fans!! lol

Chocolate Chili Cupcakes!

Chocolate Chili Cupcake Naming Contest in honor of Cinco de Mayo~

Well, I put the radar out there on my facebook group, www.katiskupcakes.com, for help in naming my Chocolate Chili Cupcakes. This is the recipe and the story that follows. I used two different icings for the final presentation-you'll have to let me know which you like best and if you are patient and read to the end, you will also find out the winning name of the cupcake--I'm keeping you in suspense for now!

Chocolate Chili Cupcakes (Adapted from "125 Best Cupcake Recipes)

1 1/4 cups all-purpose flour

1/2 cup unsweetened Dutch-process cocoa powder, sifted

1 teaspoon chipolte chili powder

2 teaspoons finely ground coffee

3/4 teaspoon baking soda

1/4 teaspoon salt

1 cup granulated sugar

1/3 cup vegetable oil

1 egg

1 teaspoon vanilla

3/4 cup buttermilk

1 tablespoon instant coffee granules

1/2 cup semisweet chocolate chips

(Chocolate Glaze or Chocolate Frosting for frosting cupcakes)

First, preheat the oven to 350 degrees and line your muffin tins with paper liners.

In a small bowl, I mixed together the dry ingredients; including the flour, cocoa powder, ground coffee, baking soda and salt.

In a large bowl, I whisked together the sugar, oil, egg and vanilla until smooth.

In a separate bowl, I stirred together the buttermilk and instant coffee.

Next, I alternately whisked the flour mixture and the buttermilk mixture into the oil mixture, making three additions of flour mixture and two of buttermilk mixture and beating until smooth.

At this point, I mixed in the chocolate chips.

Now it was time to scoop the batter into the prepared pans. I baked them for about 22 minutes (Baking times can vary from about 22-27 minutes depending on your oven; tops of cupcakes should spring back when lightly touched).

I let these cool in the pan for about 10 minutes and transferred them to a cooling rack. After they had completely cooled, it was time to ice them!! As I stated I tried some with a sticky fudge frosting and others with a smooth chocolate ganache glaze. This recipe made 12 cupcakes.

Well, for those of you who are still reading, I am ready to divulge the winning name!! Meet the official winning cupcakes: The Cha Cha Cha Chipotle Chili Chocolate Cupcake! (Winning entrant was Cris Candelori--thanks again for the great fiery name! Loved it!!)

Smores--that old campfire favorite is still as delicious even without the camping out, as my kids informed me the other day. They were my official testers for these yummy looking cupcakes. I started out with a graham cracker base, added the chocolate batter equipped with mini chocolate chips, topped it off with gooey marshmallow topping-added some graham cracker crumbs and plopped a big square of Hersheys chocolate on top! If you could have smelled the kitchen--to DIE for!!! Who says you need a campfire or a tent to enjoy Smores??

Well, I have embarked on making my Smores cupcakes! I used Bake and Destroy's Smores Cupcake recipe and it was a great payoff--they smelled, looked and tasted amazing!! Here's some photos of the finished product!

I made some chocolate frosting tonight for a cupcake order and it smelled delish! It had semi-sweet chocolate squares, cocoa powder, powdered sugar, butter and vanilla-but what really made it amazing was the heavy cream-yummo! It wasn't as hearty as a usual buttercream since I didn't pipe it in a pastry bag so I decided to give the cupcakes a little "star power". I made some royal icing (not my fave--consistency was way wrong for piping). I died half of the batch robin's egg blue and the other half a light brown. Then I scooped each of these halves into the sides of my pastry bag. I used a ribbon tip and I was so thrilled with the results. They felt very springy to me and it was amazing how the colors took on a life of their own. Each beautiful cupcake was topped with a baby blue chocolate egg--I'd say this was a sweet success.

This was def. a lot of fun-but intense--supplies everywhere!! I felt like I was back in Art school again in the studio, late at night just experimenting with colors and textures while I created these gems!!

I started with a basic chocolate and vanilla cupcake, each topped with buttercream icing. I think the chocolate cupcake came out better than the vanilla, however, after they were all dolled up-it didn't matter really-the "fancy schmanciness" of them deflected from any flavor issues-lol! But the only downside--lots of cleaning up-you wouldn't believe what the kitchen looked like--I have some work to do in that area--I'm still just a messy artist at heart!! Happy Easter

Well, I had a great time producing my first ever "Peep Show" this evening! Not the R-rated one for those who have their minds wandering! No, this was the classic Easter treat-Marshmallow peeps. I tried dipping them in chocolate and putting them on a large dollop of buttercream swirls. Of course, I needed a cupcake first and foremost-so I went with the old stand-by: chocolate! Well, I gave the cupcake pops that Bakerella created a whirl. After alot of minor problems, lol, I came up with my own version of the "hot spring chicks". How did everyone else's come out?? I am still trying to figure out how Bakerella gets them so darn perfect--she is gifted!! Mine are bit of a mess, but I feel like they are cute, funny and whimsical. Almost like catching them with their shower caps on --can you tell what I mean. Either a shower cap or an Easter bonnet! You be the judge. Either way, they go down deliciously and are oh so cute--it's just a shame to eat them-oh well, the trials of being a baker!

Well everyone, I am on a mission!! I have to make a BIG impression this weekend for an old friend who is trusting me with her family's tastebuds. I've been scouring all of my favorite cupcake websites looking for that truly unique and delectable cupcake. If anyone has any suggestions, I'd love some help. I've consulted the divine Miss Martha, Gourmet magazine, Magnolia Bakery's recipes, and countless others. Now, they are all starting to blend together (no pun intended).
